Description & Use: All true pepper whether black, white, green or pink comes from the berries of a tropical evergreen vine, Piper nigrum. Black pepper is native to the Malabar Coast of India and is one of the earliest spices known.
Today there are over 2000 types of pepper, and the most common are:
• Black pepper – is obtained by picking green grains, and then without any processing dried in the sun. Black pepper is most commonly used in the kitchen.
• White pepper – obtained by levyingsoaking only then dried. White pepper has a slightly milder flavour than black, and also is considered to be healthier.
• Red pepper – is obtained from fully ripe, red beans, which are dipped in salt water, then frozen or quickly dried. Its smell is most often described as a mixture of pepper and lemon.
• Green pepper – is obtained by picking the grain before ripeing. The grain process is the same as that of a red pepper.

How to test the purity of your Black Pepper:
Drop a small number of peppercorns or a little amount of black pepper powder in a clear glass full of water. Pepper powder or peppercorns will settle down due to their weight. Papaya seeds or Papaya seed powder, on the other hand, will float. Similarly, sawdust will also float on the surface of the water. Now stir the water and look for the presence of an oily film or tiny oil droplets. Any signs of oil will indicate the presence of mineral oil in the pepper.
If your tests show the presence of mineral oil in the pepper, discard it. Mineral oil is unfit for human consumption and harmful even in small quantities. Do try out this simple test at home to be sure that your family eats healthy and stays healthy.
