CAULIFLOWER
Cauliflower Rani or the white cauliflower is the most commonly found and grown variety in India and China. This is the variety that one can casually find in farmer's markets and regular vegetable displays. For us, Indians, the white cauliflower forms an important part of the staple vegetarian diet. The white variety is not only native to the Indian subcontinent and China but also found in Northern Europe, U.S and other countries. The white variety has a copious white curd and can be harvested after 90-95 days of transplanting. The white cauliflower is also quite versatile and can be eaten in a variety of ways which include fried, steamed, mashed, boiled, roasted, or simply cooked with other vegetables. It is as nutritive as the other varieties and is abundant in Vitamin C, K, and other essential phytochemicals. However, it does not contain the flavanoids and pigments like the purple variety and hence does not provide health benefits that the purple cauliflower does. All-in-all, it's a really great food to add to your diet!
Brinjal
Brinjal, also famously known as the Eggplant and Aubergine world-over has other names, particularly, in South Asian regions. Known as Baingan and Bataun in the Indian and Pakistani vernaculars, Brinjals are a much loved vegetable cooked in a variety of styles. Actually a fruit of the Nightshades plant, aubergines belong to the same family as tomatoes, potatoes and bell peppers. With a deep purple and shiny exterior, eggplants give you a super dose of essentials like, Vitamin B1, Vitamin B6, Vitamin K, folate, potassium, manganese, copper, and dietary fibre. Rich in antioxidants such nasunin, consuming brinjals can help you in getting rid of free radicals and excess iron deposits. It is also especially beneficial for people with cardiovascular diseases.
Bitter Groud
Who can forget the acquired taste of home-cooked Bitter Gourds? Bitter gourd or bitter melon bolder have been in use in India, especially in the northeastern region for years now. It’s a member of the Cucurbitaceae family and grows on a vine. This variety of bitter melon is popular for its short and narrow shape and skin covered in prickles along the vertical ridges. When mature, the fruit of this variety of bitter melon will average to 8-10 cms in length and the white flesh will have a dense, and firm texture with flat seeds. The texture is rather crunchy with a relatively bitter flavour than other bitter melon varieties in use. The plant is a fast-maturing kind and is extensively cultivated for a variety of stuffed gourd recipes. It’s best to remove the white flesh and seeds before preparing the rough skin for consumption. Bitter gourd bolder is an excellent source of Vitamin A and C, potassium, folate, iron and fibre. You can try soaking the slices of bitter gourd in saltwater for 30-40 minutes prior to cooking to reduce some bitterness.
