Cooking with Cinnamon:
To keep intact its fragrance and flavor; cinnamon spice is ground just before preparing dishes and added at the last moment in the recipes since prolonged cooking results in evaporation of its essential oils.
Cinnamon sticks can impart flavor to a dish or sauce during the cooking process and then be discarded before serving. Ground cinnamon can be mixed into foods or sprinkled atop baked goods, desserts, savory dishes, and beverages. Used sparingly, cinnamon extract can liven all manner of dishes.

Storage:
• Cinnamon is available in either stick or powder form. While the sticks can be stored for longer, the ground powder has a stronger flavor. If possible, smell the cinnamon to make sure that it has a sweet smell, a characteristic reflecting that it is fresh.
• Whole sticks should be stored in cool, dry, dark place, in airtight glass containers for many months and can be milled using hand-held mill as and when required.
• Ground/powder cinnamon spice should be stored in the refrigerator inside sealed containers and should be used as early as possible since it loses its flavor quickly.

Safety Profile:
Uncooked cinnamon spice can cause choking and respiratory distress. Excessive use of the cinnamon stick may cause inflammation of taste buds, gum swelling, and mouth ulcers. Large quantities can cause difficulty breathing, dilate blood vessels, and cause sleepiness, depression, or even convulsions.
